I have already posted how to do mutton biryani in pressure cooker. Today i m going to post how to keep it in dum. This is really a lengthy process and it takes time to cook. Yet, the final outcome is delicious and the taste is similar to the muslim wedding biryani. Perfect biryani needs practise. The main reason i bought Instant pot/ slow cooker is to keep biryani. Now, i cook like a professional if it is biryani. :)
Ingredients:
- Mutton - 1/2kg
- Basmati Rice - 1/2 kg
- Onion - 2 (Big)
- Tomato - 2
- Ginger Garlic Paste - 2 tbsp
- Turmeric powder - 1/2 tsp
- Red Chilly - 6 to 8
- Curd - 2 tbsp
- Lemon - 2 tbsp
- Mint Leaves - 1/2 cup
- Coriander Leaves - 1/2 cup
- Ghee - 2 tbsp
- Oil - 2 tbsp
- Cinnamon stick - 1 inch
- Cloves - 2
- Cardamom - 2
- Salt to taste
Preparations:
- Marinate Mutton in turmeric powder and a tbsp of lemon.
- Soak Rice for 30 mins.
- Soak red chilly in water for 30 mins and grind to a smooth paste by adding a handful of tomato.
- Slice onion and tomato.
- Wash and drain mint and coriander leaves.
Cooking Instructions:
- Press Saute Mode. Heat Ghee and oil.
- Add Cinnamon, cloves and cardamom.
- Add 1/3rd of Onion and saute till translucent.
- Add ginger garlic paste and saute till raw smell goes.
- Add mint and coriander leaves.
- Add red chilly paste and saute for a min.
- Now add the remaining onion and cook for a couple of mins.
- Add tomato, salt and cook for a min.
- Add marinated mutton and mix it nicely.
- Add Curd and remaining lemon juice.
- Turn off saute mode and press Manual high pressure for 20 mins( Sealed).
- In the mean time Boil water and add soaked rice and salt.
- Cook Till half done or for 7 mins.
- Once pressure dies down naturally, open the lid and switch on saute mode and adjust to more inorder to simmer the excess water in the mutton. Stir now and then.
- Once the water is reduced to half cup turn off the IP.
- Add the half cooked rice, mix it gently and press slow cook for 1 hr. (Sealed)
- Dum process started and after 1hr turn off.
- Yummy yummy dum biryani is ready. Serve it with onion raita.



I tried this out with my new instant pot and the end results was amazing!! Whole family relished it.. My husband has never been a mutton fan in General but was totally blown away by this one.. Keeper recipe for me! Thank you so much 👍😊
