Ennai Kathirikai/ Oil Brinjal Stir fry

This recipe i learned from my MIL. She is a pure vegetarian so i learned most of my vegetable stir fry and kuzhambu varieties from her. The original recipe calls for without onion but i tried with onion.

Ingredients:

  1. Brinjal - 8 to 10
  2. Small onion - 10
  3. Salt to taste
  4. Sambar powder - 1/2 tsp

For Roast and Grinding:

  1. Channa Dal - 1 tsp
  2. Urad Dal - 1 tsp
  3. Red Chilly - 3
  4. Garlic - 3 cloves
  5. Cumin Seeds - 1/2 tsp
  6. Coconut - 3 tbsp

For Tempering:

  1. Oil - 2 tsp
  2. Mustard seeds - 1/2 tsp
  3. Urad dal - 1/2 tsp
  4. Curry leaves - 5 to 6

Cooking Instructions:

  1. Dry roast and grind all the ingredients mentioned under for grinding.
  2. Heat oil in a pan and add ingredients mentioned under for tempering.
  3. Add Onion and saute till translucent.
  4. Add Brinjal and salt.
  5. Add Sambar powder and cook till tender.
  6. Add the ground powder and cook for another 5 mins.
  7. Serve with Rice.
