This recipe i learned from my MIL. She is a pure vegetarian so i learned most of my vegetable stir fry and kuzhambu varieties from her. The original recipe calls for without onion but i tried with onion.
Ingredients:
- Brinjal - 8 to 10
- Small onion - 10
- Salt to taste
- Sambar powder - 1/2 tsp
For Roast and Grinding:
- Channa Dal - 1 tsp
- Urad Dal - 1 tsp
- Red Chilly - 3
- Garlic - 3 cloves
- Cumin Seeds - 1/2 tsp
- Coconut - 3 tbsp
For Tempering:
- Oil - 2 tsp
- Mustard seeds - 1/2 tsp
- Urad dal - 1/2 tsp
- Curry leaves - 5 to 6
- Dry roast and grind all the ingredients mentioned under for grinding.
- Heat oil in a pan and add ingredients mentioned under for tempering.
- Add Onion and saute till translucent.
- Add Brinjal and salt.
- Add Sambar powder and cook till tender.
- Add the ground powder and cook for another 5 mins.
- Serve with Rice.
