Vazhakkai Bajji is a favourite evening snack with tea. My MIL used to do this snack for any auspicious day especially on pongal and diwali. It is a very easy and quick recipe which can be done within 10 mins. I added a tbsp of idly dosa batter to the bajji batter to increase the crispiness.
Ingredients:
- Raw Banana - 1
- Kadalai maavu/ Gram flour - 1/2 cup
- Rice flour/ Arisi Maavu - 4 tbsp
- Corn flour - 1 tsp
- Idly dosa batter - 3 tbsp
- Red chilly powder - 1 tsp
- Ajwain seeds - 1/2 tsp
- Asafoetida - a pinch
- Baking Soda - 1/2 tsp
- Salt to taste
- Hot oil - 2 tsp
- Water - As Needed
- Oil for deep frying
Cooking Instructions:
- Peel the banana skin and slice them thin. Immerse in water until used.
- Mix all the ingredients from 2 to 12 and make a batter.( The batter consistency is the main thing in bajji. It should be neither thick nor thin).
- Hot oil is added to avoid sucking too much oil.
- Immerse the sliced banana to the batter and drop in oil. Cook on both sides until turn golden brown in medium flame.
- Serve hot with coconut chutney.
