Palakottai Fry/ Palakottai poriyal/ Jackfruit seed fry

My mom used to save the jackfruit seeds after eating the fruit. She used to make kuzhambu, fry with seeds. Palakottai Fry is a perfect evening time snack. Dry the seeds in sun and remove the skin. Let's see the step by step process.

Ingredients:

  1. Palakottai seeds - 15 to 20
  2. Turmeric powder - 1/4 tsp
  3. Mustard seeds - 1 tsp
  4. Urad dal - 1 tsp
  5. Curry leaves - 6
  6. Red chilly - 1
  7. Sambar powder -3/4 tsp (Optional)
  8. Salt to taste
  9. Oil

Cooking Instructions:

  • Dry the seeds in sun or dry roast them for a couple of mins.
  • Cut them into halves and remove the skin.

  • Pressure cook them for 5 whistles by adding turmeric powder,salt,seeds and water.
  • Heat oil in a pan.
  • Add mustard seeds and allow it to splutter.
  • Add urad dal, red chilly, curry leaves and cooked seeds.
  • Add Red chilli powder or sambar powder.(optional if u need more spice).
  • Cook for a couple of mins. Adjust salt if needed.
  • Serve hot with coffee, tea.
