My mom used to save the jackfruit seeds after eating the fruit. She used to make kuzhambu, fry with seeds. Palakottai Fry is a perfect evening time snack. Dry the seeds in sun and remove the skin. Let's see the step by step process.
Ingredients:
- Palakottai seeds - 15 to 20
- Turmeric powder - 1/4 tsp
- Mustard seeds - 1 tsp
- Urad dal - 1 tsp
- Curry leaves - 6
- Red chilly - 1
- Sambar powder -3/4 tsp (Optional)
- Salt to taste
- Oil
Cooking Instructions:
- Dry the seeds in sun or dry roast them for a couple of mins.
- Cut them into halves and remove the skin.
- Pressure cook them for 5 whistles by adding turmeric powder,salt,seeds and water.
- Heat oil in a pan.
- Add mustard seeds and allow it to splutter.
- Add urad dal, red chilly, curry leaves and cooked seeds.
- Add Red chilli powder or sambar powder.(optional if u need more spice).
- Cook for a couple of mins. Adjust salt if needed.
- Serve hot with coffee, tea.
