Green leaves are recognized as one of the functional foods for its nutritional anti-oxidants. During my childhood days my mom used to make it thrice in a week like keerai kadaisal, keerai poriyal. Here i'm not getting all varieties of leaves. Everywhere i can get is palak. Generally, i make palak paneer. For a change, i tried this aloo palak and its yummy.
Ingredients:
- Palak - 1 bunch
- Onion - 1
- Tomato - 1
- Ginger garlic paste - 1 tbsp
- Baby potato - 10
- Red chilly powder - 1 tsp
- Garam Masala - 1 tsp
- Turmeric powder - 1/2 tsp
- Cumin seeds - 1 tsp
- Cinnamon Stick - 1 inch
- Salt to taste
Cooking Instructions:
- Boil and peel the potatoes. Poke it using fork or knife.
- Boil water and add palak along with little sugar. Switch off the flame and cover it for a couple of min. Drain the water and run through cold water to retain its color.
- Once cooled grind it smoothly.
- Heat oil in a pan and saute onion till translucent.
- Add tomato and cook till mushy. Switch off the flame. Grind it smoothly.
- Heat oil in a pan and add bay leaves, cinnamon and cumin seeds.
- Add ginger garlic paste and stir till raw smell goes.
- Add the onion tomato paste.
- Add red chilli powder, turmeric powder and salt.
- Add palak and cook for 5 mins. If needed sprinkle water.
- Add potatoes and garam masala. Stir it nicely. Cook for 3 to 4 mins.
- Serve hot with roti.
