Bone-based soups contain lots of calcium which is essential for bone building and teeth strengthening. It is a great dish for people who are watching their weight. Mutton nenju elumbu soup is good for kids who are often affected by cold.
Ingredients:
- For Grinding:
- Fennel Seeds - 1 tsp
- Cumin seeds - 1 tsp
- Peppercorns - 2 tsp
- Red Chilly - 1
- Others:
- Fennel Seeds - 1 tsp
- Cumin seeds - 1 tsp
- Peppercorns - 2 tsp
- Red Chilly - 1
- Mutton Bone - 1/2 kg
- Small Onion - 15
- Tomato - 1
- Ginger garlic paste - 1&1/2 tbsp
- Green chilly - 1
- Turmeric powder - 1/2 tsp
- Lemon Juice - 1 tbsp
- Salt to taste
- Coriander leaves - a handful
Cooking Instructions:
- Pressure cook mutton with Ginger garlic paste, turmeric powder and salt with a cup of water for 6 whistles.
- Dry roast the ingredients for grinding and grind it coarsely.
- Heat oil in a pan and add cumin seeds, allow it to splutter.
- Add onions and cook till translucent.
- Add ginger garlic paste and cook till raw smell goes.
- Add tomato and green chilly.
- Add the bone along with the stock and allow it cook for 15 mins. All the juice from the bone will get into the soup by this time. Cover and cook.
- Remove the bone from the soup and discard it. (If the bone has flesh in it add it to the soup)
- Add coconut milk and cook for 4 mins. (Optional )
- Add lemon juice and coriander leaves. Switch off the flame.
- While serving add some freshly ground pepper and salt if needed.
