Mor Kuzhambu

One of the must recipe in most of the south indian wedding's. A very easy and quick recipe with little preparation. We can do this kuzhambu with ash gourd, bottle gourd, lady's finger, drumstick or without any vegetables too. We can also add paruppu urundai in this kuzhambu.

Ingredients:

  • For Grinding:
    1. Raw Rice (Pacharisi) - 1 tsp
    2. Toor dal - 1 tsp
    3. Channa dal - 1 tsp
    4. Coriander seeds - 2 tsp
    5. Cumin seeds - 1 tsp
    6. Green chilly - 2
    7. Ginger - 1 inch
    8. Fenugreek seeds - 1/4 tsp
    9. Coconut - 1/4 cup

  • Others:
    1. Curd - 3 cups
    2. Ash gourd - 1 & 1/2 cup
    3. Turmeric powder - 1/4 tsp
    4. Asafoetida - a pinch
    5. Curry leaves - 5
    6. Mustard seeds - 1/2 tsp


Cooking Instructions:

  1. Peel the skin of ash gourd and remove the seeds. Cube them in 1 inch size. Boil them with turmeric powder and salt. Keep aside.
  2. Soak rice, dal and ginger for an hour.
  3. Beat curd nicely using hand blender or mixie.
  4. Dry roast Coriander seeds,cumin,fenugreek and coconut.
  5. Grind rice,dal and roasted ingredients coarsely.
  6. Heat oil in a pan. Add mustard seeds and allow it to splutter. 
  7. Add Asafoetida,Turmeric powder and ground paste with 1 & 1/2 cup of water. Allow it to boil.
  8. Add the cooked Ash gourd and cook for 5 mins.
  9. Add the beaten curd and cook for a min. Switch off the flame. Adjust salt to taste.
  10. Serve hot with steamed rice and potato fry.
