Poosanikai Kootu/ Ash Gourd Kootu

Ash gourd is loaded with nutritions and has 96% water. So, if you are looking for losing weight then this vegetable helps to do it faster. After 7 months of pregnancy, it is one of the main diet women should take. Here comes, Ash Gourd kootu:

Ingredients:

  • Main Ingredients:
  1. Ash Gourd - 1 cup
  2. Channa dal - 1/4 cup
  3. Salt to taste
  4. Turmeric powder - 1/4 tsp
  • For Grinding:

  1. Raw rice (pacharisi) - 1 tbsp
  2. Coconut - 1/4 cup
  3. Green chilly - 2
  4. Cumin seeds - 1 tsp

  • For Temper:

  1. Mustard seeds - 1/2 tsp
  2. Urad dal - 1 tsp
  3. Curry leaves - 6
  4. Red Chilly - 1

Cooking Instructions:

  1. Cut the Ash gourd into small cubes.
  2. Heat water in a pan and add ash gourd, channa dal, turmeric powder and salt. Let it cook in medium flame for 8 to 10 mins.
  3. Soak raw rice in water for 15 mins.
  4. Grind rice, coconut, chilly and cumin.
  5. Add the ground paste to the ash gourd mixture. Cook till raw smell goes.
  6. Heat oil in a pan, add mustard seeds and allow it to splutter.
  7. Add urad dal, curry leaves and red chilly.
  8. Add the tempering to the cooked ash gourd mixture. Adjust salt if needed.
  9. Serve hot with white rice.
