Vatha Kuzhambu is one of the compulsory recipe for meals in restaurants and wedding. We can add brinjal, drumstick, sundakkai or manathakali in this recipe or simply add small onion. It is a very easy recipe and can make within 15 to 20 mins. It can serve with plain rice and appalam. I used dried sundakkai. Fresh ones also enhance the taste.
Ingredients:
- Main Ingredients:
- Small onion - 10
- Dried Sundakkai - 1/4 cup
- Tamarind - 1/2 lemon size
- Garlic - 5 cloves
- Sambar powder - 2 tsp
- For Tempering:
- Gingelly oil - 2 tbsp
- Mustard seeds - 1/2 tsp
- Urad dal - 1/2 tsp
- Cumin seeds - 1/4 tsp
- Curry leaves - 5
- Red chilly - 1
Cooking Instructions:
- Soak Tamarind in hot water for 15 mins.
- Heat oil in a pan and fry the dried sundakkai for 2 to 3 mins. Remove and keep aside.
- In the same pan add oil. add the ingredients mentioned under for tempering.
- Add Onion and garlic and saute till it turns translucent.
- Add the tamarind extract and allow it cook till raw smell goes.
- Add the fried sundakkai and cook till it reaches the consistency.
- Serve hot with steamed rice and appalam.
