Thakkali thokku - It is an excellent side dish for rice, idly, dosa and chapati. It is a great dish for working ladies. you can refrigerate it for a week. We used to go for a picnic twice in a year in my childhood days. My mom prepare this thokku along with idly, chapati during the trip as we can't expect home food while travelling. It stays good for 3 to 4 days without refrigerate. Now let's learn how to make this thokku in a simple and easy way.
Ingredients:
- Tomato - 6 to 8
- Gingelly oil - 6 tbsp
- Mustard seeds - 2 tsp
- Fenugreek seeds - 1 tsp
- Curry leaves - 6
- Red chilly powder - 1&1/2 tsp
- Salt to taste
Cooking Instructions:
- Press "Saute" mode and add 3 tbsp of oil. Add the finely chopped tomatoes and saute for a couple of min.
- Turn off and press "Slow Cooker" option, Adjust to "More" for 1hr. Stir occasionally.
- Heat a pan and dry roast a tsp of mustard seeds and fenugreek seeds.
- Crush it using mortar and pestle.
- Heat 3 tbsp of oil in a pan, Add the remaining mustard seeds and allow it to splutter.
- Add the crushed mustard and fenugreek seed mixture.
- Add the curry leaves and switch off the stove.
- Now add the red chilly powder and give a nice stir. (Don't add the red chilly powder when the oil is too hot coz that will make it black).
- After hearing beep from the IP, pour the oil mixture to the tomatoes. (By this time the tomatoes turns mushy and there will be slightly water content).
- Press "Saute" mode and adjust to "Less". Stir it once.
- Turn off after 3 to 5 mins. (To evaporate the excess water).
- Cool it and Store in a air tight container.
