Mushroom soup in Instant Pot

Mushrooms are low in calories, fat free, cholesterol free. It also includes relief from breast cancer, prostate cancer and diabetes. It helps in weight loss and increases the strength of immune system.
It is necessary  to take mushrooms at-least once in a week. Today we will see how to make mushroom soup with step by step procedure.



Ingredients:

  • Mushroom - 250gms
  • Onion - 1
  • Garlic - 4 cloves
  • Bay leaf - 1
  • Butter - 2 tbsp
  • Dried Thyme - 2 tsp
  • Maida/APF - 2 tbsp
  • Vegetable stock - 1 litre
  • Fresh Cream - 2 tbsp
  • Salt to taste
  • Pepper

Cooking Instruction:

  • Press 'Saute' mode and add butter. Add garlic and bay leaf, saute till raw smell goes. Add onion and saute till translucent.
  • Add thyme and mushrooms. Mushroom oozes out water. Cook till most of the water evaporates. Add Maida and stir till it coats completely in the mushrooms.
  • Add Vegetable stock, salt and pepper. Cancel 'Saute' option. Turn on 'Soup' Option for 10 mins in sealing position.
  • Once pressure releases naturally, open the lid and add fresh cream. Turn on 'Saute' mode and cook for 2 to 3 mins. (If you like to have more creamy just blend it using blender. I prefer to chew the mushrooms hence avoided).
  • Serve hot with toasted bread.
