Carrot Halwa is my all time favourite dessert. I have already posted a slow cooking method of Carrot Halwa. I wanted to try it with khoya and prepared an instant khoya with milk powder and fresh cream. Serve it along with ice cream and i'm sure it tastes yummy.
Ingredients:
- Grated Carrot - 1 cup
- Milk - 3/4 cup
- Sugar - 1/3 cup
- Khoya - 1/4 cup
- Ghee - 2 tbsp
- Cashew Nuts - 1 tbsp
Cooking Instruction:
- Peel the skin of the carrot and grate it.
- Heat a heavy bottom pan and add ghee. Add the grated carrots and cook till the raw smell goes. It'll take 3 to 5 mins and carrots start to shrink. Stir now and then.
- Add milk. Cook till carrot cooked fully and the water content evaporates. Add sugar. After adding sugar, it'll become runny again. Stir continuously and cook till the water reduces.
- Add khoya and give a nice stir to avoid sticking at the bottom. It starts getting thicker. Add nuts and cook for a min and switch off the flame. The whole process should be done in low to medium flame.
