After shifting home, started packing lunch box for husband. Here is one of the variety rice recipe that perfectly goes well with lunch box menu.
Mangai Thokku
Cooking Time : 15 mins
Raw Mango - 1 cup (Shredded)
Red Chilly powder - 3 tsp
Turmeric powder - 1/2 tsp
Mustard Seeds - 1/2 tsp
Fenugreek Seeds - 1/2 tsp
Salt to taste
Gingelly Oil - 4 tbsp
Ingredients:

Mustard Seeds - 1/2 tsp
Fenugreek Seeds - 1/2 tsp

Gingelly Oil - 4 tbsp
Cooking Instructions:
- Heat oil in a pan, add mustard seeds and allow it to splutter.
- Add the shredded mango, Turmeric powder and saute till they are cooked and tender. It'll take around 5 to 7 mins.
- Add Red chilly powder and cook till raw flavour goes.
- Dry roast fenugreek seeds and crush it.
- Add the fenugreek powder and salt.
- Store it in air tight container once cooled completely.
- While using heat a pan with oil, add this thokku and heat it slightly. Then add hot rice and mix it nicely.
