Nei Appam


Ingredients:

   Nei Appam                              
      Preparation Time : 5 hrs | Cooking Time : 10 mins
  • Raw rice - 1 cup
  • Jaggery - 3/4 cup
  • Coconut - 3 tbsp
  • Cardamom powder - 1/4 tsp
  • Salt - a pinch
  • Baking soda - 1/4 tsp
  • Ghee - for frying

Method 1:

  • Soak raw rice for 3 hrs. Drain and grind it smoothly by adding 2 tbsp of water. Add cardamom powder and salt in the batter.
  • Shred jaggery and melt it using a tbsp or 2 of water. Allow it to cool for sometime and filter it to the batter. Add coconut (shredded) and mix it nicely.
  • Allow it to ferment for 2 hrs. Before making appam add baking soda. Heat appe pan and add 1/2 tbsp of ghee in each hole. Then pour the batter, cook till it turn golden brown and turn to the other side using a spoon and do the same. 

Method 2:

  • Soak rice for 3 hrs. Grind the rice along with shredded jaggery smoothly. Add coconut at last and pulse it once.
  • Add cardamom powder, salt. Allow it to ferment for 2hrs and repeat the above process.
  • I tried both the methods and both turned well.
