Mutton Kadai


Mutton Kadai - This recipe takes at least 1.30hr cooking. You can also pressure cook it but i prefer to cook the whole process in a kadai so that the taste enhances and mutton will be juicy along with the gravy.

Ingredients:

   Mutton Kadai                               
      Cooking Time : 1.30 hrs
  • Mutton boneless - 300gms
  • Onion - 1 big
  • Tomato - 1 big
  • Ginger garlic paste - 1 tbsp
  • Curd/ Yogurt - 2 tbsp
  • Turmeric powder - 1/4 tsp
  • Kashmiri Red chilly powder - 1/2 tsp
  • Salt to taste
  • Coriander leaves - 2 tbsp
  • Groundnut oil - 3 tbsp

     For Roasting & Grinding: (Basic Kadai Masala)

  • Coriander seeds - 2 tsp
  • Cumin seeds - 1 tsp
  • Fennel seeds - 1 tsp
  • Peppercorns - 1 tsp
  • Red chilly - 3
  • Cinnamon sticks - 1 inch
  • Fenugreek leaves - 1/4 tsp

Cooking Instructions:

  • Dry roast all the ingredients mentioned under roasting except fenugreek leaves. grind it along with fenugreek leaves. Keep aside.
  • Heat oil in a kadai, add ginger garlic paste and saute for a min then add mutton pieces and saute till color changes.
  • Add turmeric powder, onion and tomato. Cover and cook for 20 mins in medium high flame. Stir occasionally.
  • Reduce the flame and add curd, salt and masala powder.
  • Add red chilly powder, green chilly and coriander leaves. Sprinkle water if needed. Again cover and cook till the mutton turns soft(20 mins). Once done the gravy starts oozing out oil. 
  • Serve hot with rice and roti.
