Paneer Veggie Pulao


Ingredients:

   Paneer Pulao                              
      Cooking Time : 30 mins
  • Basmati Rice - 1 cup
  • Paneer - 200gms
  • Onion - 1
  • Ginger garlic paste - 1 tbsp
  • Green chilly - 2
  • Mixed vegetables - 1/2 cup (I used carrot, beans, peas, corn)
  • Garam Masala - 1/4 tsp
  • Salt to taste
  • Coconut Milk - 3/4 cup
  • Water - 3/4 cup
  • Ghee - 2 tbsp
  • Oil - 2 tbsp
  • Bay leaf - 1
  • Cinnamon stick - 1 inch
  • Cloves - 2
  • Cardamom - 2
  • Cumin seeds - 1/2 tsp


Cooking Instructions:

  • Soak Rice for half-an hour.
  • Heat Ghee and oil in saute mode, add bay leaf, cinnamon stick, cloves, cardamom and cumin seeds. Then add ginger garlic paste and saute for a min. Now add onion, green chilly and saute for a couple of mins.
  • Add vegetables and saute for 3 to 4 mins. Add coconut milk, water and salt. Now add soaked rice, garam masala and 1/2 tsp of ghee and mix well.
  • Cancel saute mode, Cover the lid and turn on Rice mode. 
  • Heat ghee in a tawa, add paneer cubes and saute till golden brown. 
  • Once the rice cooked transfer it to another bowl, add the sauted paneer cubes.
  • Serve hot with onion raita.
