Kathirikai Murungakai Puli Kuzhambu


Ingredients:

   Kathirikai Murungakai Puli Kuzhambu            
      Cooking Time : 30 mins
  • Brinjal - 6
  • Drumstick - 1
  • Small Onion - 12
  • Garlic - 6 cloves
  • Tomato - 1
  • Tamarind Pulp - 1 cup
  • Sambar powder - 1 tbsp
  • Turmeric powder - 1/4 tsp
  • Fenugreek Powder - 1/4 tsp
  • Rice flour - 1 tsp (Optional)

      For Tempering:

  • Red chilly - 2
  • Curry leaves - a sprig
  • Hing - 1/4 tsp
  • Vadagam - 1 tsp (Or)
    • Mustard seeds - 1/2 tsp
    • Urad dal - 1/2 tsp
    • Cumin Seeds - 1/2 tsp
  • Gingelly oil - 3 tbsp

Cooking Instructions:

  • Heat oil in a kadai, add vadagam, red chilly, hing, curry leaves and allow it to splutter. Add Garlic and onion, saute till color changes.
  • Add the vegetables and saute till it turn soft. Then add tomato, salt, fenugreek powder and sambar powder. Saute nicely till raw flavour goes.
  • Once the vegetables cooked well, add tamarind pulp. Allow it to boil, Cook till it thickens and oil oozes out. (Add rice flour to thicken if needed. Rice flour + water mixture.)
  • Serve with hot white rice and papad.
