Biryani - A recipe only made for a special occasion during my childhood days. After marriage if i hear this restaurant's biryani is very good from my neighbours then the very next day we hunt the location and go even if it is 30km far to eat the biryani. All my family are biryani lovers. Not all biryani tastes same. i have tasted 'N' number of biryani's and each have a unique taste of its own.
During the early days of trying biryani recipe either i'll overcook or undercook it. I was always searching for a fool proof method. I even bought a rice cooker specially for biryani bcoz someone has told me that you'll get fluffy rice but that too didn't worked out for me. My neighbour thought me this simple style of biryani that anyone can do it. So, here comes:
Ingredients :
- Mutton - 1/2kg
- Basmathi Rice - 1/2 kg
- Onion - 2 (Big)
- Tomato - 2
- Ginger Garlic Paste - 2 tbsp
- Green Chilli - 2
- Red Chilli powder - 2 tsp
- Curd - 2 tbsp
- Lemon - 2 tbsp
- Mint Leaves - 1/2 cup
- Coriander Leaves - 1/2 cup
- Ghee - 4 tbsp
- Bay Leaves - 1
- Cinnamon stick - 1 inch
- Cloves - 2
- Cardamom - 2
- Salt to taste
Notes:
- Soak 5 red chilli in water for 15 mins and grind it to a smooth paste and use this instead of green chilli and red chilli powder. It really tastes amazing with little extra work. I used to do in that way. As i mentioned it as simpler way so that anyone can do it, i omitted the grinding part and used ready made chilli powder.
- Don't soak basmati rice for more than 30 mins.
- In order to keep in memory the easier way is
- Equal proportion of onion and tomato
- Equal proportion of Curd,lemon juice,red chilli paste, ginger garlic paste.
- Equal proportion of Mutton and Rice.
- Equal proportion of Mint and Coriander.
- You can always reduce the quantity of ghee and add oil to that. 2 tbsp ghee + 2 tbsp oil.
Cooking Instructions:
- Marinate mutton with turmeric powder and lemon for 20 mins.
- Soak Basmati rice for 20 mins.
- Heat a Pressure cooker. Add Ghee and oil.
- Add bay leaves, cinnamon, cloves and cardamom. once it splutters, add 1/3 of onion and cook for a couple of mins.
- Add Ginger garlic paste and cook till raw smell goes.
- Add Mint, coriander leaves and red chilli paste one by one.
- Now add the remaining onions and cook for 3 mins.
- Add Tomatoes and cook for 3 mins. Add Salt to taste.
- In a medium heat add curd and remaining lemon juice. Mix it nicely.
- Add marinated mutton and cook for 5 to 6 mins.
- Cover and cook for 4 to 5 whistles depending on the mutton.
- once the pressure dies, open the cooker and add the soaked rice.
- This is the most important step:
- Curd,tomato,onion,mutton has the tendency to leave water. So, for 2 cups of rice i m going to add only 3/4 to 1 cup of water. The actual ratio is 1:1 , water:rice
- If you are not sure about how much liquid is present in the cooker, there is two options to go:
- first thing u can measure the liquid in the cooker by straining it. But, this method will be messy.
- Second option, you can open the cooker and cook the mutton gravy till the water evaporates. once all the water evaporates you can add 1:1 water:rice proportions.

- As i did this multiple times, i just add 1 cup of water for 2 cups of rice.
- You can adjust accordingly to your quantity.
- cook it for 2 whistles and simmer for 5 mins.
- If you are afraid of burning, heat an iron tawa. Once the tawa is really hot reduce the flame to simmer.
- After 2 whistles completed, place the cooker over tawa and cook for 5 to 8mins.
