Instant Pot Carrot Rice


Ingredients:

   Carrot Rice                                 
      Cooking Time : 30 mins
  • Carrot -2 (Shredded)
  • Onion - 1
  • Basmati Rice - 1 cup
  • Ghee - 1 tbsp
  • Oil - 1 tbsp
  • Bay Leaf - 1
  • Cinnamon stick - 1 inch
  • Cardamom - 2
  • Cloves - 2
  • Cumin Seeds - 1 tsp
  • Green chilly - 1
  • Pepper powder - 1/2 tsp
  • Salt to taste
  • Water - 1&1/2 cup
  • Coriander leaves - For Garnishing


Cooking Instruction:

  • Peel the skin and grate the carrots.
  • Press 'Saute' mode, add ghee and all the whole spices. Allow it to splutter.

  • Now add onion, green chilly and saute till translucent. Add Carrots and cook till it is done. Add salt and pepper.
  • Now add the soaked rice along with water. (For 1:1&1/2 rice:water ratio if soaked or 1:2 rice:water ratio if not soaked). 
  • Cancel 'saute' mode and turn on 'Rice' Option. Once done, NR pressure and transfer it to another bowl. Garnish with coriander leaves.
