Tomato Thokku Stove top

Thakkali thokku - It is an excellent side dish for rice, idly, dosa and chapati. you can refrigerate it for a week. We used to go for a picnic twice in a year during my childhood days. My mom prepare this thokku along with idly, chapati during the trip as we can't expect home food while travelling. It stays good for 3 to 4 days without refrigerate.

Ingredients:

   Tomato thokku                              
      Cooking Time : 1 hr
  • Tomato - 6
  • Mustard seeds - 1 tbsp
  • Fenugreek seeds - 1/2 tsp
  • Red chilly powder - 2 tbsp
  • Curry leaves - a sprig
  • Salt to taste
  • Gingelly oil - 4 tbsp


Cooking Instructions:

  • Heat 2 tbsp of oil in a wide open pan. Add tomatoes and cook till it turns mushy and cooked well.
  • Heat a pan and dry roast a tsp of mustard seeds and fenugreek seeds. Once done crush it using mortar and pestle.
  • Heat oil in the same pan, add rest of the mustard seeds and allow it to splutter. Add the crushed powder, curry leaves and turn off the stove. Remove the pan from the stove top and add red chilly powder. Transfer it to the tomatoes, add salt and allow it to cook till the water evaporates.
