Baby potato Roast

Baby potato roast goes well with curd rice and sambar rice. Try to roast it in iron kadai so that it'll get roasted uniformly and enhance the taste too. My kid love the color and texture of these small potatoes.

Ingredients:

   Baby Potato Roast                                
      Preparation Time : 20 mins | Cooking Time : 10 mins
  • Baby Potato - 15
  • Red chilly powder - 3/4 tsp
  • Coriander powder - 1/2 tsp
  • Garam Masala - 1/2 tsp
  • Cumin Powder - 1/2 tsp
  • Salt to taste
  • Oil - 3 tsp
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1/2 tsp


Cooking Instructions:

  • Rinse the potatoes and pressure cook it for 3 whistles. Once done peel the skin and poke it using fork.
  • In a bowl add chilly powder, coriander powder, garam masala, cumin powder, salt and oil. (I used kashmiri red chilly powder)
  • Add the potatoes in the spice mix and allow it to marinade for 15 mins.
  • Heat oil in a kadai, add mustard seeds and urad dal. Allow it to splutter. Then add the marinated potatoes and saute for 8 to 10 mins in a low flame.
  • Serve it with curd rice/ sambar rice.
