Recently bought madras curry powder from store and really it helps a lot because adding this powder alone is enough. No need to add coriander powder, cumin powder, turmeric powder, cinnamon, bay leaf separately.

- Heat a tbsp of oil in a pan. Add onion and saute till it turn translucent. Add ginger garlic paste and saute till raw smell goes. Now, add tomato and cashew nuts and cook for couple of mins.
- Allow it to cool completely and grind smoothly.
- In the same pan add a tbsp of oil and add onion tomato paste. Add little water and cook for 3 to 4 mins. Now add madras curry powder, chilly powder and salt.
- Add mushrooms, cover and cook in a medium flame till done.
- Add garam masala and fresh cream. Give a nice stir. Switch off the flame.
