Coriander Pongal/ Kothamalli Pongal


Ingredients:

   Kothamalli Pongal                                 
      Cooking Time : 30 mins
  • Raw rice - 1 cup
  • Moong Dal - 1/4 cup + 2 tbsp
  • Milk - 1/2 cup
  • Water - 4&1/2 cup
  • Coconut milk - 1/2 cup
  • Salt to taste
  • Ghee

    For Grinding:

  • Coriander leaves - 1 cup (Chopped roughly)
  • Green chilly - 2
  • Pepper - 1/4 tsp
  • Cumin seeds - 1/2 tsp
  • Curry leaves - a sprig
  • Cashew nuts - 6 to 8
  • Ginger - 1 inch

Cooking Instruction:

  • Rinse rice and dal together. Pressure cook it along with water and milk for 4 to 5 whistles. Mash it well.
  • Grind all the ingredients mentioned under for grinding.
  • Heat ghee in a pan, add cashew nuts and fry it till golden brown. Then add pepper and cumin seeds. Now add the coriander paste and cook till the raw smell goes.
  • Transfer it to the cooked rice and simmer it for another 5 mins. Add salt and coconut milk. Mix it well. cook till it thickens.
  • Serve it hot.
