Brinjal Fry without onion


Brinjal Fry - cooked in my cast iron pan. Cooking in iron cookware really enhance the taste of the food and good for health too. So, please try this recipe in iron cookware.

Ingredients:

   Brinjal Fry                              
      Cooking Time : 20 mins
  • Brinjal - 10
  • Salt to taste
  • Groundnut oil - 2 tbsp

    For Roasting & Grinding:

  • Urad dal - 1 tsp
  • Channa dal - 1 tsp
  • Cumin seeds - 1 tsp
  • Coconut - 2 to 3 tsp
  • Red Chilly - 2 to 3
  • Curry leaves - a sprig

    For Temper:

  • Mustard seeds - 1/2 tsp
  • Urad dal - 1/2 tsp
  • Curry leaves - a sprig


Cooking Instructions:

  • Dry roast the ingredients mentioned and grind it coarsely.
  • Heat oil in a kadai, add mustard seeds and allow it to splutter. Then, add urad dal and curry leaves. Now add the chopped brinjal and saute it for a couple of mins.
  • Add the chilly coconut powder, salt and cook till done in a low medium flame.
  • Serve it hot with curd rice, sambar rice.
